Add 2 Tbsp of olive oil to a large pot on medium heat
Add quartered onion, garlic and let simmer 1 minute
Add water and beer
Add seasonings to broth
Wrap breakfast sausage in wax paper to prevent it from breaking
Add potatoes to broth and cook for 10 minutes
Once potatoes are tender, add wrapped sausage and lingucia
Add clams, and cover. Cook for 20 minutes until clams open
Once clams are done, use a slotted spoon to spoon the clams, sausage, potatoes, and linguica into a bowl.
Using 2 small bowls, spoon broth into these bowls
Use a small saucepan to heat up 2 sticks of butter
Pour butter into 2 more small bowls
Serve clam boil, and broth and butter for dipping.
