Equipment

  • 1 stockpot
  • 2 small bowls for broth
  • 2 small bowls for butter
  • 1 slotted spoon
  • 1 sauce pan

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 1 onion quartered
  • 1 quart water
  • 1 Tbsp crushed red pepper
  • 3 Tbsp Old Bay seasoning
  • 1 can beer
  • 1 Tbsp onion powder
  • 1 tsp black pepper
  • 1 lb breakfast sausage links
  • 8 lbs steamer clams 2lbs of clams per person
  • 1 lb linguica
  • 2 sticks butter
  • Wax paper
  • 2 russet potatoes

Instructions

  • Add 2 Tbsp of olive oil to a large pot on medium heat
  • Add quartered onion, garlic and let simmer 1 minute
  • Add water and beer
  • Add seasonings to broth
  • Wrap breakfast sausage in wax paper to prevent it from breaking
  • Add potatoes to broth and cook for 10 minutes
  • Once potatoes are tender, add wrapped sausage and lingucia
  • Add clams, and cover. Cook for 20 minutes until clams open
  • Once clams are done, use a slotted spoon to spoon the clams, sausage, potatoes, and linguica into a bowl.
  • Using 2 small bowls, spoon broth into these bowls
  • Use a small saucepan to heat up 2 sticks of butter
  • Pour butter into 2 more small bowls
  • Serve clam boil, and broth and butter for dipping.
