Easiest New England Clam Boil

Ever have a day where you just feel like seafood? Well welcome to my life. Growing up on the East coast has its perks. One of them being the availability of seafood ALL YEAR ROUND. I love all different types of seafood, except clams. My husband however, is obsessed with them! He could eat seafood all day everyday, breakfast… lunch.. and dinner.

Well… maybe not breakfast (We rarely eat breakfast). Anyway, he is always in the mood for clam boils… like year round in the middle of the freezing cold winter. Yup you got it that’s him. He is drawn to the summer “clam boil”  with warm butter for dipping along with all the yummy sides that go with it. And me being the awesome wife that I am, chef it up pretty easily with just a few ingredients we always seem to have in our house, or that isn’t too far out of the way to go buy. So here is our take on the easiest New England clam boil. Enjoy!

Easiest New England Clam Boil

Equipment

  • 1 stockpot
  • 2 small bowls for broth
  • 2 small bowls for butter
  • 1 slotted spoon
  • 1 sauce pan

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 1 onion quartered
  • 1 quart water
  • 1 Tbsp crushed red pepper
  • 3 Tbsp Old Bay seasoning
  • 1 can beer
  • 1 Tbsp onion powder
  • 1 tsp black pepper
  • 1 lb breakfast sausage links
  • 8 lbs steamer clams 2lbs of clams per person
  • 1 lb linguica
  • 2 sticks butter
  • Wax paper
  • 2 russet potatoes

Instructions

  • Add 2 Tbsp of olive oil to a large pot on medium heat
  • Add quartered onion, garlic and let simmer 1 minute
  • Add water and beer
  • Add seasonings to broth
  • Wrap breakfast sausage in wax paper to prevent it from breaking
  • Add potatoes to broth and cook for 10 minutes
  • Once potatoes are tender, add wrapped sausage and lingucia
  • Add clams, and cover. Cook for 20 minutes until clams open
  • Once clams are done, use a slotted spoon to spoon the clams, sausage, potatoes, and linguica into a bowl.
  • Using 2 small bowls, spoon broth into these bowls
  • Use a small saucepan to heat up 2 sticks of butter
  • Pour butter into 2 more small bowls
  • Serve clam boil, and broth and butter for dipping.
